Hello and Welcome to my blog.

Thank you for looking at my blog. My name is Jason. I grew up in a small farm town in Ohio and currently reside in Pennsylvania with my wonderful wife, Nahtanha, and our "furbaby" Sherlock.

I am currently attending Culinary School at Mercyhurst North East. I will be graduating in May 2013. I have been cooking since I was a kid. My Mom and Grandma are excellent bakers and I learned a lot from them.

I'm definitely not a baker, but I love to cook. I'm a sucker for science. So the process behind how something is created sparks my interest. Making things that we normally buy already processed is fascinating. For example, bacon or ice cream. Molecular Gastronomy is something else that fascinates me. I made an amaretto caviar for a final practical in my Baking class. These kinds of things are what keeps me excited to learn.

One thing that I truly believe in is knowing where our food comes from and how it is processed. I'm not an extremist when it comes to eating organic but eating vegetable free from pesticides and chemicals is rewarding. I love to garden. Every year, I grow tons of tomatoes and other veggies to process and can. We make massive amounts of juice from the tomatoes and then can it. During the winter, we use it for Chili, Soup, and Spaghetti Sauce! If you look at the ingredients label on store bought, there are so many things for preservatives and flavor that you don't need to eat. If you can make it and store it yourself, then you not only save money, but you're not ingesting all these things.

One day, I plan to open a restaurant. We will grow all of our own veggies and herbs. If we cannot keep up or get all of them from "our" garden, then we will buy locally and support local farmers. All meat will also be bought from local farmers. Why should we buy from large corporations? If a restaurant can produce a lot of their own produce, food costs would be minimal. The "Farm to Table" movement has arrived and I don't think it's going anywhere anytime soon. This is a dream of mine that I hope to turn into a reality.
