Dilly Pickle Pasta Salad

So there is a summer salad that is going around the internet. It's creamy, slightly tangy, and very pickley! Everyone is pinning it and I thought I would see what all the buzz is about. Of course, I had to put my own take on it. Our "Dilly Dust" seasoning can be purchased online on our Etsy shop.



Dilly Pickle Pasta Salad

Ingredients:
  • 1 lb. Box Medium Shells Pasta
  • 1 1/2 C. Baby Dill Pickles, sliced
  • 8 oz. Sharp Cheddar Cheese, cubed
  • 1 C. Pickle Juice
     Dressing
  •  1 1/3 C. Mayonnaise
  • 2/3 C. Sour Cream
  • 1/4 C. Pickle Juice
  • 1 1/2 Tbls. Swine Dining's "Dilly Dust"
Directions:
  1. Boil pasta until al dente in salted water according to box directions.
  2. Drain pasta and rinse with cold water.
  3. Put the pasta in a large bowl and pour the pickle juice over it. Toss and let sit. 
  4. In a medium bowl, mix up all the dressing ingredients.
  5. Drain the pickle juice from the pasta.
  6. Mix together the pasta, sliced pickles, cubed cheese, and dressing.
  7. Refrigerate for at least 1 hour before serving. Best the next day!
This recipe makes enough for 16 sides. If you need less, just cut the recipe in half. It is great to take to parties, graduations, and summer picnics. It's quick to whip up and so easy to do.
